Azteca Tomato Soup

Hello everyone, today we'll be preparing a fantastic tomato based soup. This recipe is super tasty and it will be ready in about 30 minutes. The time will depend on if you are preparing the chickstock from the beggining or if you are using stock cubes.


Ingredients


8 tomatoes

1 onion

2 garlic cloves

3 chicken breast

6 chicken or vegetable stock cups


Toppings:


Sour Cream

Mozzarella cheese (or Monterey Jack Cheese)

Pico de Gallo

Tortilla Chips (plain Doritos)


This recipe serves 2 people, but if you are more, do not worry, double or triple the amounts and everything will be fine!

Preparation


To prepare this soup, you will need chicken or vegetable broth. In this case, we will prepare it from the beginning, so start by placing two tablespoons of oil in a pot over medium heat and adding your favorite vegetables and chicken breasts. Add 8 cups of water and cook until chicken is completely done. Strain the broth and reserve it. Shred the chicken and reserve it as part of the soup toppings. The step of preparing the broth is not essential; If you have broth ready in your fridge, you can use it, or if you prefer you can use a cube of broth and cook with it the chicken breasts to shred them later.


Quarter the tomatoes, the onion and peel the garlic. Put everything into the blender and blend until smooth; add a little water and olive oil to help the blender do its job. Pour the tomato mixture into a saucepan with 2 tablespoon of olive oil and cook over medium-high heat until thick, 8-10 minutes. Add the stock and boil for 4-5 minutes, strain the soup and season to perfection with salt and pepper.


Serve in soup plates and now is time to play with the toppings. Top with shred chicken, mozzarella cheese, sour cream, pico de gallo and tortilla chips. Enjoy!!

If you don't have one of the ingredients on the list or don't like something, don't hesitate to use another ingredient. For example, if you use vegetable broth instead of chicken broth and don't put shred chicken in it, you could make a nice vegetarian soup.


This recipe is just a guide, and you can adapt it to your tastes. So do not stop making it, you will be surprised how fast and delicious it is!
