Baked Garlicky Mushrooms

This fabulous tray of Portobello mushrooms can be your main course or a delicious and fresh garnish or accompaniment if you are not vegetarian.



Hello everyone, today we'll be baking a luscious garlicky mushrooms tray. This recipe is super easy and will be ready to eat in about 30 minutes.


Ingredients


4 to 6 large Portobello mushrooms

40g cheddar or mozzarella cheese

350g mixed-colour cherry tomatoes

1 onion

4 cloves of garlic

Fresh oregano


This recipe serves 2 people, but if you are more, do not worry, double or triple the amounts and everything will be fine!

Preparation


We'll start preheating the oven to 200ºC/400ºF/gas 6. Then, peel and very finely chop the garlic. Halve the cherry tomatoes. Slice the onion into thin julienne strips and peel the mushrooms, reserving the peel.


In a roasting tray drizzle 1 tablespoon of olive oil and place the onions, 3/4 of garlic, the portobello mushrooms with the stems facing up, the cherry tomatoes and the peel of the mushrooms. Drizzle all with 1 tablespoon of olive oil and 1 of red wine vinegar, add a pinch of sea salt and black pepper and toss together. Baked for 10 minutes.


Remove the tray from the oven and grate the cheese over the mushrooms, add the rest of the garlic and the oregano leaves. Return the tray to the oven and cook for 15 more minutes, or until the cheese is melted and everything is golden.


Now is time to dish up and enjoy!

If you do not have one of the ingredients on the list or you don't like it, don't hesitate to use another types of mushrooms, or basil insted of oregano or your favorite spice. This recipe is just a guide, and you can adapt it to your tastes. So do not stop making it, you will be surprised how fast and delicious it is!

If you are a spicy lover, add as much chili sauce, chilli flakes, or fresh chili as you dare.
