Chaufa Rice is a delicious recipe of Peruvian cuisine. It is influenced by the influx of Chinese immigrants to Peru.
Hi everyone, today we will be cooking the famous and amazing Chaufa Rice; This delicious dish offers us the opportunity to use leftover food that has remained in the fridge during the week, such as rice, chicken or pork. We will use fresh ingredients this time but it is just as great using what you already had in the fridge.
For this recipe you will only need 20 minutes if we start with the cooked rice; If you want to make fresh rice, the time of the recipe will then include what it takes to make the rice.
Ingredients
250g Cooked rice
600g Chicken (4 boneless chicken thighs)
2 small carrots or 1 large
8 stalks of spring onion
2 eggs
3 to 4 tablespoons of dark soy sauce
This recipe is intended for 2 people, but if you want to cook for more people, do not worry, double or triple the amounts and everything will be fine!
Preparation
Start preparing all the ingredients for the cooking time, so peel the carrots, cut them lengthwise into 4, and then cut into thin slices. Of the spring onion we will only use the leaves (the green part), so wash and chop them into thin slices too. Beat the eggs without adding salt or pepper.
For the chicken, you will start by cutting it into medium squares and seasoning with salt, pepper and a little oil. Then, in a very hot Wok over high heat, with 1 or 2 tbsp of Asian aromatic oil (this is optional, if you do not have it, use sunflower oil or the one of your preference), add the chicken and cook until it is golden brown. Remove from the Wok, and let the excess oil drain (you can use a pasta strainer to do this).
Now the expected moment ... using the same Wok (if you don't have one, use a deep fry pan) over high heat with 1/2 tablespoon of sunflower oil or any oil that does not add flavor to the food, cook the eggs stirring constantly.
When the eggs are ready, add the chopped carrot, mix and sauté for 2 minute; add cooked rice, mix and sauté for 1 minute; add the golden chicken, mix and sauté for 1 minute; incorporate the soy sauce and mix very well until all the rice has acquired the brown color of the soy; Add the spring onion and sauté for another 30 sec/ 1 minute.
It's DONE!! Serve on your favorite dish, decorate with a little more spring onion and enjoy this wonderful dish.

If you don't have one of the ingredients on the list or you don't like something, do not hesitate to use something else. You could change the chicken for pork, beef strips, tofu, shrimp or add all of the above and make a SUPER Chaufa Rice.
If you are a fan of vegetables, you can add coloured peppers after the carrots and maybe fresh chili, if you are a spicy lover. This recipe is just a guide, and you can adapt it to your tastes. So don't stop doing it, you'll be surprised how fast and delicious it is!
