There are so many different recipes for shrimp cocktail all over the world, especially in South America. However, our recipe is so easy, fresh and delicious that it will be your favorite for sure.
Hello everyone, today we'll be doing a scrumptious Colombian shrimp cocktail .
This recipe is very easy and will be ready to eat in about 10 minutes.
Ingredients
500g medium shrimp (40-50), uncooked, peeled and deveined.
2 onions (white or red)
1-2 Limes
Ketchup
Mayonnaise
Handful of coriander
1-2 Oranges
Because we love this recipe, and we eat a lot of it when I prepare it. I have to say that it serves 2 people. But if you are good serving, it could be right for 3.
Preparation
Bring water to a boil in a medium pot over high heat. Add salt to taste and then add the raw shrimp. Boil them for 1 minute (Yes, just 60 seconds), and then put them in ice water, or under running Cold water for a while. This step will stop the cooking process, so the shrimp will not be overcooked, tough or chewy.
Finely chop the onions, put them in a bowl and add salt generously and hot water until covered. let it rest for 5 minutes. This step will reduce the intense spicy bite of our onions, but if you like onion's raw flavor, skip this step.
Finely chop the coriander. In a bowl, mix 8 tablespoons of ketchup, 4 of mayonnaise, the juice of half an orange and the juice of a whole lime. Try the sauce and add more of any of the ingredients to make it perfect to your liking. the combination of these ingredients is very personal and these amounts are just a guide. Add and mix the coriander into the sauce.
Drain the onion very well, trying to remove all the excess water. This is essential to avoid adding more liquid to the sauce and to prevent it from being watered down. Add and mix the onion into the sauce too.
Finally, mix the shrimp and the sauce, stir very well all together and that's it .
We serve individual portions with fried plantain and roasted arepas on the side;, but you can do it with white rice, crackers or whatever you can think of.
