Smashed hamburger on the grill

Today my wife brought me as a gift a spectacular griddle that I am going to release with this delicious hamburger recipe.



Hello everyone, today we are going to prepare a spectacular "smashed" burgers with Japanese mayonnaise and homemade sweet and sour pickles.


Ingredients


12 strips of bacon

1 pinch of brown sugar


250ml vegetable oil

20 garlic cloves

2 egg yolks

1 teaspoon red wine vinegar

salt and pepper to taste


1 kilo of ground beef with 20% fat

6 hamburger buns

lettuce

tomato

homemade pickles


Preparation


Start the night before the day you decide to eat these burgers, spread the bacon strips on a rack and sprinkle them with a little brown sugar on one side. Leave them in the fridge overnight.


The next day, over medium heat, grill the bacon strips until crisp, golden and glazed. If like me, you lit the grill to make the bacon, take advantage of the fire and brown about 15 or 20 garlic in half a glass of oil without letting them burn, let them rest until cool, remove them from the oil and mash them until they form a paste.


It is time to assemble the mayonnaise, use 2 egg yolks, a teaspoon of red wine vinegar, salt and pepper to taste, stir with an electric mixer and start adding the oil little by little until the mayonnaise has the desired consistency. It has no fault. add a pinch of sugar and mix well. reserve.


Use ground beef with a fat percentage of 20% and make small balls of approximately 120 to 170 grams. Heat your griddle or skillet over high heat, grease the hot surface with a little oil or pork fat and place a meat ball. Then with the help of a piece of baking paper and a spatula, squish the ball until it is the desired thickness. I recommend that you make them thin and if you want more meat, make several and put them together in a single burger. Add salt and freshly ground pepper. Flip it over and place a slice of yellow cheese on top.


Cut the burger bun in half, brush it with butter on the inside and toast it a little on the griddle.


Now you only have to assembly, bread, mayonnaise, lettuce, tomato, meat, cheese, the delicious glazed bacon and homemade pickles. Close and enjoy.
