Zucchini omelette, Ardito's

For lovers of the Spanish omelette who want a more "healthy" option, here I bring you this delicious omelette with zucchini, spinach and mozarella cheese. It is a delight.


Hello everyone, the healthiest and most delicious Spanish omelette, Ardito's Kitchen style.


Ingredients


10 eggs

4 medium or 3 large zucchini

1 cup mozzarella cheese grated

150gr of raw and washed spinach


This recipe is designed for 1 tortilla of approximately 5 portions, so if you want to make more or less, multiply or divide the amounts and everything will be fine.

Preparation


Start by beating the eggs and seasoning them with salt and pepper to taste.


Cut all the zucchini into approximately 1 cm squares, fry them in a frying pan with a good drizzle of oil until soft. Drain and add to the beaten eggs.


Add the spinach leaves, add salt and mix everything very well. In the same pan where you made the zucchini (very hot), with a little more oil, add half of the tortilla mixture.


Add the grated cheese right in the center of the tortilla and try to flatten it as much as possible. Add a little freshly ground pepper and add the rest of the tortilla mixture making sure to cover all the cheese.


Constantly check the tortilla on the sides, if a lot of liquid accumulates from the zucchini, remove it with a spoon or directly throw it on the pike carefully. When the edges are golden brown, use a plate to flip the tortilla and put it back in the pan.


This tortilla takes a little longer for the whey in the cheese and zucchini, so keep it on low heat and check it constantly.


After 4 more minutes you have your omelette ready to accompany with alioli and baguette bread.
